Dry-Aged Native Beef

Highland Drover produces dry-aged beef from native cattle breeds, raised slowly in a low-input system in the north of Scotland.

Our cattle are managed with a focus on animal welfare, steady growth, and consistent quality that slower, natural development produces beef with structure and fat cover required for proper dry ageing.

Each animal is hung on the bone and dry aged to allow flavour to develop naturally. During this time moisture is reduced, tenderness improves, and the true character of the beef emerges.

We butcher the whole carcass with care, balancing prime steaks with traditional cuts and mince, ensuring quality and respect for the animal from start to finish.
